The Best Raw Cookies!

These cookies have taken the test of several non vegan, non raw people and across the board they have been a huge hit. I started out making raw granola and it transformed into my most loved recipe I do. I actually haven’t written it down as I change things from time to time but I do have the basic recipe committed to memory. I start with about 3 cups of sprouted buckwheat that I dehydrate and sprinkle generously with nutmeg and cinnamon. I then get out my coffee grinder and add 2 cups of sprouted, dehydrated almonds. I grind them almost into a powder but leave some small bits for additional texture and crunchiness in the cookies. Then I grind 1 cup of flax seeds and stir it in. I use organic maple syrup and coconut oil as binders and do the syrup to taste. Use more for a sweeter flavor. I use about a half a cup of each. Next I juice 2 apples and stir in the juice and pulp separately. I add about 1/2 tsp of salt and more cinnamon and nutmeg to taste.  The last thing I stir in is fruit. I add about a cup of raisins, 12-15 dates soaked and chopped and 3 ripe bananas chopped. I use an ice cream scooper to make balls on the teflex that a flatten with a silicone spatula and dehydrate for about 5-6 hours and then flip them and remove the teflex. This recipe will yield about 22 large cookies. I haven’t tried adding other things but I am going to soon. I think raw cacao and berries will be a great addition so be creative and play! Have fun!
